A Nutty Quinoa Recipe

Quinoa salad

Quinoa is one of my favorite grains because it is so versatile and easy to make. This recipe is simple, delicious and packed with nutrients.

Quinoa Salad with almonds and flax seeds:

Ingredients:
1 cup of quinoa
1T. ground raw almonds
1-2 T. ground flax seeds
1 red pepper, chopped
1 bunch of green onion, chopped
3/4 cup of raisins
Shredded parmesan cheese (optional)
Sea Salt to taste
Olive oil

Cook the quinoa as directed. Sauté chopped red pepper and green onion in 1T. of olive oil. Add raisins and continue to sauté until the raisins begin to get a little plump and the red pepper is a little soft. Add more olive oil if needed. Ground raw almonds and flax seeds (I used a blender). Combine the cooked quinoa and the sauté red pepper, green onion and raisins and blend. Add sea salt to taste and drizzle olive oil as the quinoa should not be to dry. Shred parmesan cheese on top and viola you are done! I prefer serving this salad at room temperature or chilled, however serving warm is an option as well. Enjoy!
