Summer is right around the corner, and with that comes our favorite time of year, Peach Season in Georgia. Pearson Farm would like to help you get “Peach Season Ready” with some of our favorite recipes. A peach is a peach but Pearson Farm peaches are different. Many ask why our peaches are so sweet. Some say it’s the red clay here in Zenith, Georgia, while others think it’s our Southern hospitality.  Either way, one bite and we’re sure you’ll agree, Pearson Farm peaches are the best.

Pearson Farm will begin taking peach orders in mid-May for delivery in mid- June. We hope to share some of our sweet Pearson Farm peaches with you to use in these delicious recipes along with your own summer favorites. We look forward to hearing from you soon….

Grilled Chicken Salad with Georgia Peach Salsa

Ingredients:

2 tablespoons lime juice
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon seeded, finely minced jalapeno pepper
1 pound boneless skinless chicken breast halves
8 cups mixed fresh salad greens
1/4 cup Cilantro Peach Vinaigrette
1 and 1/3 cups Peach Salsa
1/4 cup chopped Pearson pecans, toasted

Directions:

To make marinade, combine lime juice, honey, soy sauce and jalapeno pepper. Place chicken in a shallow container or zip-top plastic bag and cover with marinade. Marinate at least two hours in the refrigerator. Remove chicken from marinade and discard marinade. Preheat grill and cook chicken until done, (about 5 minutes on each side over medium hot coals). Let chicken stand for 5 minutes, then cut into thin strips. Toss salad greens in vinaigrette and arrange on a large serving platter or on four individual serving plates. Top evenly with chicken, Peach Salsa and pecans.

Frozen Peach Yogurt 

Ingredients

5 peaches peeled & chopped in bite size pieces
1 1/2 cups raw brown sugar
1 1/2 tab balsamic vinegar
1 quart plain Greek yogurt ( not fat free)

Directions:

Combine the peaches with sugar and balsamic vinegar, cover and refrigerate overnight. Next day combine Greek yogurt with peach mixture and mix well. Pour into ice cream freezer and churn according to directions from manufacturer. Each within an hour for soft serve. Makes about 6 cups

DSC_4261Georgia Peach Shortcake

Ingredients:

1/2 cup butter
2 cups self-rising flour
3/4 cup buttermilk
4 tablespoons sugar
divided Vegetable cooking spray
3 cups sliced Pearson Peaches
1 and 1/2 cups fresh whipped cream

Directions:

In medium bowl, cut butter into flour with pastry blender until mixture resembles coarse meal. Add buttermilk and 1 tablespoon sugar until all dry ingredients are moistened. Turn dough out onto lightly floured surface and knead 3 – 4 times.

Preheat oven to 425° F. Roll dough into 3/4” thickness; cut with a 2” biscuit cutter. Place pieces close together on a lightly greased baking sheet. Bake for 13 – 15 minutes.

While shortcake is baking, place sliced peaches in medium bowl and stir in remaining 3 tablespoons sugar. 

To serve, split shortcake in half and place peaches on the bottom half. Place the other half on top and spoon 2 tablespoons whipped cream.

Sweet Peach Drink Recipepearson-peach-nutrition

Ingredients:

1/2 peeled and muddled fresh ripe peach
1 1/2 oz Absolute Peach Vodka
1/2 oz lemon juice
1/2 oz simple syrup
1/4 oz peach schnapps
1 oz moscato d’asti
1/2 oz soda water

Instructions:

Muddle peaches in a tin, add vodka simple syrup, schnapps and lemon juice. Add ice and shake well. Fill Collins glass with ice. Pour mixture in tin over ice. Top off with Moscato and soda water. Garnish with peach pieces.

Peach, Tomato and Feta Salad

Ingredients:

2 10 oz. containers of small cherry tomatoes (tri-color if available), some sliced in half and others left whole
1-2 cups fresh Pearson Farm peaches, sliced
2 TBS. Basil cut in ribbons
4 oz. feta cheese, crumbled

Dressing: 

Shallot Vinaigrette

2/3 cup Extra Virgin Olive Oil
2 TBS. Shallots, Finely Chopped
1/4 cup White Wine Vinegar
Salt & Pepper

Directions:

Start by cutting peaches into bite sized pieces and place in bowl. Take cherry tomatoes and cut some into halves while leaving a few whole for variety and also add to the bowl. Cut rolled basil leaves into strips of equal size. Add all ingredients to bowl including feta cheese and toss to combine. Add dressing tossing a few more times and then add everything to a serving platter before enjoying.
