Summer Salsa

This recipe for summer salsa is a favorite among my family, friends, and peers-/ just the mention that someone has brought salsa brings all the nurses running to the break room.

My favorite recipe for salsa came from one of my nursing buddies. That once crumpled paper towel is kept among my favorite recipes. I could copy it over nice and neat onto a recipe card– but somehow that just seems wrong!!  We affectionately refer to it as “John’s” salsa—

2 green bell peppers
1 sweet onion
1-2 banana peppers or 1 hot pepper
1T salt
1/2 tsp pepper
2 T salt and spice blend– see recipe below
3 T apple cider vinegar
I blend all the fresh vegetables in a food processor and then add the spices and vinegar. This salsa will keep for several days in the fridge.

Salt and spice blend–
1/4 cup kosher salt
2T seasoned pepper
1T garlic salt
1T onion powder
1 1/2 teaspoons celery seeds (crushed)

Mix all and store in a tightly covered jar.
