Cranberry avocado salad

In my home the holiday dinner is one of the most anticipated meals of the year, gathered around the table with food and family. And, you will find me devoting my time preparing sensational sides that often steal the show! With a nice sweet flavor, rich in antioxidants, cranberries are a welcome sign of the holiday season to come.

Combined with toasty pecans and creamy avocadoes, Cranberry Avocado Mixed Green Salad can’t be beat! Cranberry Avocado Mixed Green Salad

Tart cranberries, buttery avocados and nutty pecans combine to make one delicious, anytime salad.

Makes 6-8 servings

  • 1 (9-ounce) bag baby spinach
  • 1 (9-ounce) bag mixed greens
  • 2 medium avocados, chopped
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, toasted
  • 1 tablespoon sugar
  • 1 tablespoon poppy seeds
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon paprika
  • 2 teaspoons ground mustard
  • 2 tablespoons minced red onion
  • 1/2 cup seasoned rice or white vinegar
  • 1/3 cup olive oil

1.  In large bowl, mix together spinach, mixed greens, avocados, cranberries, and pecans.

2.  In another small bowl, whisk together remaining ingredients for vinaigrette. Toss together when ready to serve.

Terrific Tip: Not only are avocados buttery and delicious they are also packed with nutrients.

Don’t have ground mustard, use Dijon or yellow mustard.
