The onsite Executive Chef – Alfonso Peregrina, before coming to Villa del Palmar was a chef in Cancun for over 10 years and for a year in Spain as a native of Puebla. Chef Peregrina oversees a staff of eighteen chefs and over 100 cooks. They grow a lot of their own produce and herbs, craft their own baked goods, and their mixologists can make a mean mocktail as well as traditional cocktails.

Obviously you can’t fill your days just eating, no matter how great the menu or the chefs, and Villa del Palmar has fantastic options for both you and him.

He was able to book on short notice for an entire day for a reasonable price. When he got back he was elated, he had a wonderful day on the ship, with a local captain, catching 8 Dorados – or Mahi-mahi, a beautiful golden-green colored fish known for changing colors.

The resort provides an on-site calendar of types of fish that can be caught each month. Boat rides through the Loreto islands include a snorkeling stop, and glass-bottoms so you can literally see into the marine life. The Sea of Cortez that surrounds the islands was dubbed “the Aquarium of the World” by Jacques Cousteau, so you can imagine how wonderful it is to snorkel these waters. One of the highlights of our trip was the dolphins that we came upon, a huge pod, maybe a hundred or more that played, soared, and chased alongside of our boat giving us a show of a lifetime!

Beginning the spring of 2016, there will be another reason to visit Villa del Palmar with the addition of a beautiful 18-hole golf course designed by Rees Jones.
