Wolfgang Puck’s Star Tastes for 2018 Oscars Winners

The 90th Academy Awards on Sunday 4 March at the Dolby Theatre in Los Angeles was a huge night for the cast and crew behind The Shape of Water, having been nominated 13 times, and Christopher Nolan’s Dunkirk whogot eight nods. And once again, Jimmy Kimmel returned to the stage as host. Congratulations to Guillermo del Toro on his Best Picture win for The Shape of Water. I had the pleasure of photographing all five of this year’s nominated directors during the Santa Barbara International Film Festival in February. Sam Rockwell & Frances McDormand, Gary Oldman (Darkest Hour), Jordan Peele (Get Out) winner and Allison Janney (I, Tonya) were all amazing.
The Governor’s Ball is the official post-Oscars celebration, which immediately follows the awards ceremony. It is hosted by Academy governor Lois Burwell, event producer Cheryl Cecchetto, and master chef Wolfgang Puck. It is always a world of culinary wonderment at the Governor’s Ball, the official after-party of the Academy Awards, held in the Ray Dolby Ballroom immediately after the awards ceremony. An estimated 1,500 guests attended this years event, including all the VIPs, nominees and presenters. In honor of the special 90th anniversary of the awards show, the 2018 Governor’s Ball paid tribute to the history of cinema with original artefacts and music from every era of film.
Included among the more unusual dishes Chef Puck and his staff served were caviar parfait dusted with 24-carat gold, caramel passion fruit lollipops. The coup de gras of the dinner are always those famous chocolate Oscars – handmade by Wolfgang’s team and covered in 24 carat gold dust. Meanwhile, the chef also brought back some of his signature dishes such as Wagyu beef sliders, pizzas and chicken pot pie, which he says is a particular favorite of Barbara Streisand. Caviar, lobster and truffles were also on the menu, which is created by Wolfgang Puck each year. Once the Oscar party got started more than £1,400 bottles of Piper Heidsieck Cuvee Brut were poured.
The menu started with delicious nibbles such as wagyu beef tartare, puffed black rice, and spicy tuna tartare. The stars feasted on small plates including white asparagus soup, caviar, truffle pot pie, black bass, and scallops. The is raw bar which has oysters, sea urchin, caviar parfait, and crab claws and legs was a major attraction for celebrating celebs.

Miyazaki Wagyu tartare
Scallop crudo, blood orange, finger lime, lovage (scallop shell) and urchin plate
Crab-stuffed hibiscus with lemon and pomegranate
Frozen beets with ginger milk curd, yuzu and ice lettuce
Brussels sprouts and pea shoots with mezze flavors  
Mini ravioli of pea and carrot with black truffle and cipollini onions
Black bass with eggplant, salsa verde and teardrop peppers
Asparagus salad 


Mango-lime pate a fruit with Tajin pop
Macarons – Negroni, mojito, piña colada
Blueberry-violet cake
Lychee-rose-raspberry tart
Ruby chocolate strawberry and cream
As Chef Puck points out, by the time the honorees get to dinner, they’ve been so busy getting ready they have not eaten all day. He said: “They might have had an espresso, a cup of tea in the morning, and that’s it.
