Roasted Citrus-Herb Salmon

The months of November and December are full of opportunities for wonderful get-togethers with family and friends. Since many of these occasions usually involve calorie laden main dishes and desserts, we thought we would send you a recipe for a salmon that is not only light and healthy but delicious. Enjoy this most festive of seasons!

  •  1 T. fresh parsley, chopped
  • 1 T. fresh thyme, chopped
  • 1 T. garlic, minced
  • 1 T. olive oil
  • 2 t. lemon zest
  • 2 t. lime zest
  • 1-1/2 t. salt
  • 1/2 t. pepper
  • 2 to 3-lb. salmon fillet

Combine all ingredients except salmon in a small bowl; set aside. Arrange salmon on a parchment paper-lined baking sheet; spread herb mixture over salmon. Bake, uncovered, at 400 degrees for 12 to 15 minutes, or until salmon flakes easily with a fork. Serves 4 to 6.
