July-Cool As A Cucumber

Summer is officially here and with it brings the heat! Cool down with the crunchy cucumber – a low calorie vegetable high in nutritious potassium and vitamin K. I am going to share with you one of my favorite trim&TERRIFIC® cucumber recipes, sure to excite your taste buds while cooling you off this summer. Hearts of Palm Salad–a refreshing blend of summer vegetables in a light and healthy vinaigrette and it’s even better the next day after it has soaked in the marinade!

Not familiar with hearts of palm? They are very low in calories and cholesterol while being a good source of fiber, vitamin C, and potassium. They often come canned so remember to rinse and drain to reduce sodium. Cucumbers, celery and hearts of palm with this light vinaigrette and the pop of Feta is one to put on your list. Roasted garlic, red pepper, or basil and oregano – use a variety of seasoned rice vinegars to splash on flavor!

Hearts of Palm Salad from Holly Clegg’s trim&TERRIFIC® Gulf Coast Favorites cookbook
Simple and interesting grouping of hearts of palm, celery, cucumber, and feta presents a new light invigorating salad option.

Makes about 4 (1/2-cup) servings

1 cup chopped hearts of palm
1/2 cup chopped celery
1 cup chopped cucumber, cored and peeled
2 tablespoons lemon juice
1 tablespoon NAKANO seasoned rice vinegar
1 tablespoon olive oil
Salt and pepper to taste
1/4 cup crumbled reduced-fat feta cheese

1. In a large bowl, combine all the ingredients, except the feta, and mix well.
2. Toss with the feta and serve.
