Happy-Healthy Thanksgiving Dishes

Spicy Sweet Potatoes Serves 6-8

Preheat oven to 425F

Ingredients:

  • 2 large jewel or garnet yam, cut in 1” cubes
  • Seasonings:3-4 Tbls. olive oil
  • 
½ tsp. ground chipotle pepper
 (or more to taste)
  • 1 tsp. smoked paprika (add more for a smokier flavor)
  • 
salt and pepper to taste

Combine all the seasoning ingredients together in a large bowl until well blended.*

Add in cubed yams and toss all ingredients together in the large bowl.

Spread on a large baking sheet – I use a Silpat for even browning and crispiness.

Bake for approximately 20 minutes.

Serve immediately.

 

*The leftover spiced oil in the bottom of the bowl can be combined with vinegar and additional olive oil for a delicious salad dressing. No need to wash the bowl before adding greens.

Perfect Oven-Roasted Turkey, á la Julia Child

This is inspired by a chicken recipe from Julia Child. It’s the method that keeps the turkey breast very moist and the entire bird evenly browned.

1. Preheat oven to 420F

2. Rinse turkey and pat dry. Squeeze a cut lemon over the outside of the bird, and put the halves in the turkey cavity.

3. Coat the outside of the turkey with 2 tablespoons of olive oil or melted butter.

4. Season with paprika, garlic powder, salt, pepper, and poultry seasoning, or seasonings of your choice.

5. Place a V-shaped wire rack in a roasting pan big enough to contain the turkey. Put the turkey in the rack, breast-side down.

6. Bake the turkey for 1/4 the time in the hot oven, breast side down. Calculate the cooking time for the turkey by figuring on 15-20 minutes per pound.

7. Reduce the oven heat to 325F. Flip the turkey onto one side and bake for additional 1/4 time. Flip to the other side, baking for another 1/4 time. End with breast side up for the last 1/4 time.

8. Remove from oven when leg moves easily in the socket and the juices run clear when poked with a fork.

9. Allow bird to rest 15-20 minutes before carving.
