Quite possibly my favorite food ever, the avocado truly is amazing. From taste to nutrition, this super food really delivers, containing over 13 essential vitamins and nutrients that are important to the body. Monounsaturated fats help lower cholesterol and Lutein lowers the risk of eye disease. Avocados also boast an important antioxidant, vitamin E, which has been shown in research to lower the risk of Alzheimer’s disease by 67%.  And don’t forget their skin-nourishing effects! Inside and out, avocados are an incredible ingredient as a moisturizing face-mask for bright glowing skin.

I can just about eat avocado on any food – a condiment on sandwiches, a topping on soups, and especially an ingredient in this crowd-pleasing appetizer, Guacamole Goes Mediterranean.  A perfect blend of avocado, feta, and a splash of basil and oregano seasoned rice vinegar meld together for this unbeatable nutrient-rich dip. You will find yourself coming back for more and more – I know I do!

Guacamole Goes Mediterranean

As an avocado and feta addict, this dip definitely satisfied my cravings.

Makes 5 (1/4 cup) servings

  • 1 cup chopped avocado, (1-2 avocados)
  • 1/4 cup finely chopped red onion
  • 1 teaspoon minced garlic
  • 2 tablespoons finely chopped parsley
  • 1/2 teaspoon dried oregano leaves
  • 1 teaspoon olive oil
  • 1 tablespoon NAKANO seasoned rice vinegar (basil and oregano flavored)
  • 1/4 cup crumbled reduced-fat feta cheese

1. In bowl, gently stir together avocado, onion, and garlic. Mix in parsley and oregano.

2. Gently stir in olive oil, vinegar and feta. Refrigerate or serve.
