Healthy Sweet and Sour Vegetarian Stir-Fry

A lighter sweet and sour sauce drenches pineapple, sweet bell peppers, onion and sweet potatoes. This stir-fry is served on top of brown rice, making it a protein-packed and healthy vegetarian meal.

Ingredients

2 cups brown rice (or sub white rice)

3 tablespoons extra virgin olive oil

1 teaspoon minced garlic (2 cloves)

2 1/2 cups sweet potatoes, peeled and chopped (4 very small potatoes)

10 mini or 2 large sweet bell peppers, julienned

1/2 cup yellow onion, chopped

2 cups fresh pineapple, chopped

Sweet and Sour Sauce

1/2 cup ketchup

2 tablespoons rice vinegar

2 1/2 tablespoons brown sugar (more or less to taste preference)

1/4 cup lemon juice

1/2 tablespoon cornstarch

Salt and pepper
